SOYYO Chorizo Chilaquiles with Chicken, Cauliflower Chips, Avocado & Greek Yogurt

• 2 cups cauliflower tortilla chips
• ½ cup SOYYO chorizo 🌱
• ½ cup sliced cooked chicken (grilled or rotisserie)
• ¾ cup red or green salsa (tomatillo or roasted tomato)
• 1 tbsp olive or avocado oil
• ¼ cup plain Greek yogurt (as a clean sour-cream swap)
• ½ ripe avocado, sliced or cubed

🍳 Instructions
1. Sauté the SOYYO Chorizo in a skillet over medium heat with a drizzle of oil and cook for 3–4 minutes until it starts to crisp and release flavor.
2. Toss the sliced grilled chicken (cook in air fryer or grill on the stove) over the chips drenched in red salsa.
4. Finish with a few dollops of Greek yogurt, sprinkle your cooked chorizo on top and add your sliced avocado.
