Ingredients:
- ½ zucchini (diced)
- ½ cup mushrooms (sliced)
- ½ pack SOYYO Chorizo
- 1 tbsp olive oil
- Seasonings of choice (salt, pepper, garlic powder, paprika)
- 2 large eggs
- ½ avocado (sliced)
- Sriracha (optional)
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add zucchini and mushrooms; sauté until softened (3–4 minutes).
- Add SOYYO Chorizo and seasonings. Cook until golden (about 5 minutes).
- In a small bowl, whisk eggs, then pour into skillet. Stir gently until eggs are fully scrambled and mixed with veggies and SOYYO.
- Top with sliced avocado and drizzle of sriracha before serving.
