Ingredients:

  • ½ zucchini (diced) 
  • ½ cup mushrooms (sliced) 
  • ½ pack SOYYO Chorizo 
  • 1 tbsp olive oil 
  • Seasonings of choice (salt, pepper, garlic powder, paprika) 
  • 2 large eggs 
  • ½ avocado (sliced) 
  • Sriracha (optional) 

Instructions:

  1. Heat olive oil in a skillet over medium heat. 
  2. Add zucchini and mushrooms; sauté until softened (3–4 minutes). 
  3. Add SOYYO Chorizo and seasonings. Cook until golden (about 5 minutes). 
  4. In a small bowl, whisk eggs, then pour into skillet. Stir gently until eggs are fully scrambled and mixed with veggies and SOYYO. 
  5. Top with sliced avocado and drizzle of sriracha before serving.
